Greensleeves (aka What Child is This) in an easy/intermediate arrangement for solo piano. Change each high C-natural (C5) in the melody to C-# for the dorian version. This arrangement can be taught on its own, or especially nice when preceded by the easier version which is also available -- the same right hand, but with a simple bass line based on the first notes of each arpeggio from this version.

Teaching tip: for students struggling to put the arpeggios together smoothly and in time, have them practice playing each arpeggio as a chord. They can repeat each chord 4 times. As they get better, have them play each chord only one before moving to the next. As the get proficient at this at a moderate speed, they should see a big improvement when switching back to the arpeggiated music as written.
